Air Is What Dries It Out

A bag does not seal. A tin lets air in every time you open it and holds the smell of everything it has ever held. Whatever you are keeping loses its edge the same way, for the same reason — it is sitting in air, and air takes the good part with it.

The Cellar is thickened glass with a bamboo lid that closes properly. Glass because it does not absorb anything, does not carry a smell between uses, and does not react with what is inside it. Bamboo because it seals warm and looks like an object rather than a container.

At 6.5 by 8 centimetres it is deliberately personal — the amount you are actually using, kept properly, within reach. Not a bulk jar and not pretending to be one.

Using It
  • Make sure it is dry before you fill it. A sealed jar traps moisture just as well as it keeps air out, and moisture is the one thing worse than air.
  • Press the lid down until it stops. A lid resting on the rim is not a seal.
  • Keep it out of direct sunlight. Clear glass lets light through, and light degrades most things faster than air does. A shelf, a drawer, or a cupboard — anywhere but a windowsill.
  • Open it less. Every opening is a full exchange of air. Being able to see the level without lifting the lid is the point of it being clear.

Does clear glass protect from light?

No, and we are not going to tell you otherwise. Clear glass seals against air, which is the bigger problem day to day — but light passes straight through it. Keep the jar somewhere dark and you get the best of both. If light protection is your main concern, what you want is amber or UV glass.

How much does it hold?

At 6.5 cm across and 8 cm tall it is a personal-sized jar rather than a bulk container. Think of it as what you are using this month, kept properly.

Will the bamboo lid smell of what I keep in it?

Wood is more porous than glass, so wipe the underside of the lid occasionally. The glass body itself will never hold a smell.

Can I put it in the dishwasher?

The glass is fine. Wash the bamboo lid by hand and dry it — repeated dishwasher cycles will dry wood out and eventually cost you the seal.
